Ingredients
  • 2 cups of cauliflower florets parboiled.
  • 1/2 tsp of cumin seeds
  • 1 cup of big cubed onions
  • 1 cup big cubed capsicum
  • 1 tbsp KDD olive oil
  • Salt to taste

For the marinade

  • 1 cup of KDD labneh
  • 2 tbsp of KDD olive oil
  • 1/4 cup of grated cheese
  • 1/4 cup of bread crumbs
  • 2 tbsp ginger paste
  • 1 tbsp of garlic taste
  • 2 tsp of Kashmiri chili powder
  • 1 tsp dried fenugreek leaves
  • 1/4 cup of onions
  • Salt to taste
Preparation
  1. For the marinade
  2. In a mixer add yogurt, olive oil, cheese, bread crums, ginger & garlic paste, onions, kashmiri chilli powder, fenugreek leaves and salt  to the mixer and mix to smooth paste. Keep aside.
  3. In a mixing bowl add the florets ,onion and capsicum.
  4. Pour the marinade over the florets. Keep it aside for a three hours.
  5. Skewer them on wooden skewers and keep aside.
  6. Grill them over electric or charcoal grill until done.
  7. Serve with mint chutney.
